I Heart Frijoles

I love beans. My mom says it's the only Mexican part of me that stuck :) Seriously though, I could eat them with every meal. And my mom makes the best. Since I now live 40 minuets from mom, I have to make my own. Usually they come out great. But as soon as I do a step by step guide on how to replicate these delicious beans, I burn them. Have you ever burned beans??? They leave a disgusting stench behind that linger for d-a-y-s. Moral of the story, don't make beans while you are trying on a million different outfits to find the perfect one to feature on your style blog. You will forget about them. With that said...here's what you'll need:

2 cups of Pinto beans
A medium onion
4 garlic cloves
salt to taste
1 packet of Sazon
1 cup of beef broth

Go through the beans and separate any small rocks or gross looking beans. Rinse thoroughly.

Soak beans in water overnight. Once you are ready to make them, rinse again in a strainer. Choose a pot large enough to hold two cups of beans. Remember, they will expand as they cook. Dice the onion and garlic and add in the pot with a cup of beef broth (follow the directions on the package) and enough water to cover them. Add 1 packet of Sazon seasoning and cook at medium until beans are soft. You will need to keep an eye on it and keep adding water. This could take anywhere from 2-4 hours. This is why my batch burned. I was too busy to add water and...they burned. :(:(

Once they are cooked and seasoned to your liking, mash with a bean masher, add cheese, and done! If you succeeded in not burning them, they will be tasty and look a lot prettier than mine do above. You can serve as a side dish to tacos or enchiladas. Or, it'll make a super yummy bean burrito!
Enjoy!

  11. jac, thanks so much for sharing this recipe! i also love beans, but mine usually are pretty bland (ie. i don't add much of anything to them). this looks so tasty! i'm going to try it with veggie broth instead of beef since i don't eat meat. i'm thinking it should still come out pretty yummy, right?

i always make my beans in a slow cooker - i just soak them overnight and rinse, then add enough water to cover by a few inches. i turn that baby on high and leave it for 8 hours and that's all. easy peasy and they never burn. i just use a slotted spoon to remove them from the water when they're done cooking. you could try this next time you're having a fashion show in your bedroom ;)

  13. @Kym, I think it would totally work with veggie broth cause it'll give it the extra flavor you want. Let me know how it turns out :)
